Time For Ceviche!
Here's a South American ceviche straight from Ecuador.
Similar to a Mexican Seafood cocktail, this recipe includes Chifles, or fried plantains. My buddy, greenjeans just got back from a 9 day with a butt load of Wahoo. So I went for it. My wife claims it's the best dish I've made. I agree, it's pretty dang good. Use this recipe with any fresh catch, or get in your kayak and catch a wahoo or two.
