I've been using the GoPro for a while; mostly for mountain biking and snowboarding. I'll be using it for kayak fishing as well because of the 16:9 HD video. The 4:3 remote camera I've been using still has a better quality image; the data rate of the GoPro is pretty low. It looks good on a computer, but unless you have a blu-ray burner and player, the only way you'll get the HD video on a big screen TV is to play the video directly from the camera.
To edit the GoPro MP4 files on a Mac; Final Cut would be first choice, Quicktime Pro will give you some basic editing features. On a PC; Sony Vegas Pro or Adobe Premiere Pro will work, but you will need to convert the MP4 files into another high quality format for Premiere because the MP4 is not a native Premiere file.
Either way; you will need a fairly beefy computer for full quality editing. Quad core with lots of RAM.
Also; you'll find out that the POV angle is cool at first, but as with any ultra wide angle camera, the shots start to look all the same. Generally speaking; in a 60 minute video, about five minutes of POV footage would be used.
