Cutting the Collars. I agree, they're not easy. I used
a super sharp 10" chef knife, with the force of a
260lb hungry Greek to cut thru the bone near the
apex of the yellowtail head. You may want to use
a hack saw or its blade when you get to that part.
Experiment. Use a boning knife for the majority of our
cuts. Then find something to get thru that top bone.
All the while trying not to destroy the fish at the same
time. Trial and Error. Once you figure it out, enjoy the
food and pass it on.
