I've found that my issue is not so much temperature/wind protection, as sun protection. Sitting in a kayak all day with the UV beating down from both overhead, and reflected off the water just burns the crap out of me.
Since I'm skin cancer averse, I dress like I'm fishing the flats in Florida, and use a buff and wide brimmed hat. I have been wearing just a pair of light hiking pants that zip off into shorts and deck shoes, but I still get sunburn in a band where the pants end and the shoe begins.
Starting this weekend I'll swap out the pants and deck shoes, and I'll be wearing Caddis breathable waders and Columbia Powerdrain shoes (that is if Bass Pro has them in stock up in Manteca).
Another benefit of waders that Wade informed me of - when you have that big WSB in your lap, the thicker waders protect you from dorsal spines - I can dream I guess...
