Kershaw is not good enough steel.

Forshner 8" Breaking Knife, and the Forshner 6" Boning Knife can do it all.

Including filleting the skin off.

Dexter Russell are also good knives in the same sizes, and are a little less money.

My folding kershaw never held an edge and eventually rusted out inside. Dint know about their fillet knives but I know forshner boning knives do great at just about everything when it comes to big game.

good info. not to hijack the thread, but since we're on the topic of knives, what do you guys keep handy on the water?

A cheap Promar with a thick, pointy blade, and a good size handle. It's a durable and disposable workhorse knife. It will only hold a moderately sharp edge, but its plenty sharp enough to cut bait - line - stab - etc.
Good rust resistance.

$5 or $6 at Dana Market.
