i have a 16"x 12" piece of acrylic that i put in my crate. i use that as a cutting board and a fish cleaning board. i also carry a squeeze bottle (an empty shampoo bottle) and use it as a wash down to pre-clean the yak while on the water.

Just picked this up at Ikea. 13.5" x 9.5" for less than a buck fiddy. And yes thick enough to recess some ss screws. Not sure how durable it is against cuts... but my bait knife lost it's edge years ago.
