Nuggets
My girls like catfish when filleted and cubed into small chicken nugget sized pieces, then pan fried in olive oil.
To coat catfish (and bluegill fillets) I use three bowls and coat in the following order after rinsing and patting dry: Bowl 1: flour + pepper Bowl 2: 2 beaten eggs with a dash of cold water Bowl 3: Italian (or Panko) breadcrumbs with a bunch of seasoning (more pepper, garlic, garlic salt, and whatever you like) Pan fry until golden. Put out bowls of your favorite dipping sauce out. Simple and they like it. I still don't care for the texture. I also noticed the cleaner the water the better tasting the cats. |

Nice fat cats! Why is it when your least prepare you tend to catch great fish. And when your over prepared with gears and gadget you don't do as well.
I've always like to deep fry them catfish crispy with the skin on and eat them with some mango salsa. Make sure to make the mango salsa with fish sauce and squeeze some lime. Or if you don't like fish sauce substitute salt and lime is just as good. A good balance of flavor is having the fish plain and crispy with salty/sour salsa or your fish season and the salsa sour. |
