Thanks. I just do the less is more approach. Lightly salt and pepper a filet. And sear only up to 30 secs on each side and that's it. Lest it rest then slice thin

Great catch and awesome plates
On the searing I cheat and use a torch. Wet down the cutting board you will be using anyways and hit the loin with the torch. The one I have is the orange one from harbor freight. Works great for creme brûlée and evening up the browning on a turkey too. Searing in a pan, for me at least, is too easy to overcook |

Hey ya that's a pretty cool idea I'll have to try the torch. I used to always over sear in a pan so I go really quick probably less than a minute for the whole filet. Torch sounds fun though
