Here's my homemade marinade:


30 oz pineapple juice
1.5 cup soy sauce
1 tsp chili flakes
1 tsp onion powder
1 tsp olive oil
1/4 cup honey
2 tsp peppercorn
1 tsp garlic powder
2/3 cup brown sugar


I like to marinate fillets, especially belly meat overnight, while soaking hickory hardwood in water, and smoking slowly produces great results.
